“Seven delicacies on a plate..”

Our mixed starters plate is a good offer for more than one person. In Greece it’s a tradition to eat in larger circles. Everybody in a group shares the food with all the others. This means all dishes are placed in the middle and everyone eats from the things he likes. Just like a little bit of everything. This creates the typical greek conviviality and brings joie de vivre to the table.

Our mixed starters of course include our homemade dolmades, warm Bourekia with cheese and Revithokeftedes, our balls made out of chickpeas. Additional to this we serve a mixture of our salads, including fresh aubergine salad, tarama salad, tuna salad and the traditional tzatziki. Everything for sure is homemade. On request we can serve the mixed starters purely vegetarian.

Thunfisch“mediterranean salad from most popular fish..”

It belongs to the mackerel family and therefore is a fast predator in the open seas. That implies that it has a wonderful firm and tasty meat, which makes it so popular everywhere.

We produce a refreshing mediterranean salad from tuna, which is combined perfectly with fresh bread. This creamy salad is added with fresh vegetables and herbs from the region of Rhodes. Finished, bon appetit!

Octopus Oregano

Compared to most other cephalopods the octopus has eight arms not ten tentacles like the squid. Hence octopus, okto = greek for eight. This is relatively unknown in most countries, but it’s a common Mediterranean meal for every day. Once you have enjoyed the tender and properly cooked octopus meat, you won’t be able to get away from it anymore. A real delicacy.

Cooking an octopus is a lot of work, you have to deal gently with it. Another common way is to dry the octopus on clothes lines, what can often be seen on Rhodes in many villages. Here, the meat loses the essential amount of water in the sun, so that it can be grilled afterwards without getting scorched.

When preparing our octopus oregano our cook has to carefully pay attention so that the meat won´t get hard-bitten. All too quickly the fine protein chains of the octopus meat can get chewy by the wrong preparation. Among few Tsambika has a really good grasp of this difficult recipe. Here the octopus is put into a tasty marinade based on self planted oregano and various spices from Rhodes. A true secret of the Smaragd.

Dandelion“a weed, which needs a lot of care..”

The dandelion is also prepared in ancient Greek traditions and has an old tradition as wild greek vegetable.

The cultivation is not easy. These plants have to grow at partially shaded places. Only that guarantees soft and no bitter leaves. The dandelion salad is prepared with our own fresh natural olive oil and lemon. It is extremely healthy because of the high potassium content and promotes the metabolism. And it´s also good for your liver and kidneys. Flavored with local herbs and spices, the dandelion salad is not only healthy, but also a delicious garnish.

Our cheese salad is made out of the typical handpicked herbs and spices out of our local environment. We serve this salad with mild chillies, they arise with their sweet, lightly hot juice to a tasty harmony on your tounge. Combined with fresh bread, grilled meat or just pure, it´s a side dish wich always fits.
