We produce a refreshing mediterranean salad from tuna, which is combined perfectly with fresh bread. This creamy salad is added with fresh vegetables and herbs from the region of Rhodes. Finished, bon appetit!

Compared to most other cephalopods the octopus has eight arms not ten tentacles like the squid. Hence octopus, okto = greek for eight. This is relatively unknown in most countries, but it’s a common Mediterranean meal for every day. Once you have enjoyed the tender and properly cooked octopus meat, you won’t be able to get away from it anymore. A real delicacy.

Cooking an octopus is a lot of work, you have to deal gently with it. Another common way is to dry the octopus on clothes lines, what can often be seen on Rhodes in many villages. Here, the meat loses the essential amount of water in the sun, so that it can be grilled afterwards without getting scorched.

When preparing our octopus oregano our cook has to carefully pay attention so that the meat won´t get hard-bitten. All too quickly the fine protein chains of the octopus meat can get chewy by the wrong preparation. Among few Tsambika has a really good grasp of this difficult recipe. Here the octopus is put into a tasty marinade based on self planted oregano and various spices from Rhodes. A true secret of the Smaragd.

The dandelion is also prepared in ancient Greek traditions and has an old tradition as wild greek vegetable.

The cultivation is not easy. These plants have to grow at partially shaded places. Only that guarantees soft and no bitter leaves. The dandelion salad is prepared with our own fresh natural olive oil and lemon. It is extremely healthy because of the high potassium content and promotes the metabolism. And it´s also good for your liver and kidneys. Flavored with local herbs and spices, the dandelion salad is not only healthy, but also a delicious garnish.

Combined with fresh bread, grilled meat or just pure, it´s a side dish wich always fits.

In so many countrys aubegine salat is completely unknown, but it´s a real great greek pleasure.

We only use biological aubergines, directly grown in our region. They´ll be grilled and mixed up to a fresh salat with a lot of greek herbs and spicery. This refreshing, light sourly salad goes perfectly with our homemade bread and can be point up with some white whine or retsina excellently.
